The short answer: Kagoshima Wagyu, sold as Kagoshima Kuroushi (鹿児島黒牛), is Japanese Black beef from heifers or steers raised longest and last in Kagoshima prefecture. The brand sets no grade minimum. Kagoshima keeps more beef cattle than any other prefecture except Hokkaido, and at the 2022 national Wagyu show it took first place in 6 of 9 classes.

What is Kagoshima Wagyu?
Kagoshima Wagyu is Japanese Black beef from Kagoshima prefecture, at the southern tip of Kyushu. It's sold under the brand Kagoshima Kuroushi (鹿児島黒牛), "Kagoshima black cattle," which the prefecture's agricultural cooperatives named in 1986 [1]. Its registered definition is short [1]:
| Rule | Kagoshima Kuroushi |
|---|---|
| Breed and sex | Japanese Black heifers that have never calved, or steers |
| Where | Raised longest and last in Kagoshima |
| Grade | No minimum |
| Protected | Geographical Indication since 2017; trademark held by JA Kagoshima Keizairen |
Like Miyazaki and Omi beef, the name guarantees the breed and the place, not a grade. An A5 Kagoshima steak is an A5 carcass that happened to be raised in Kagoshima.
Why is Kagoshima Wagyu so common?
Scale. Kagoshima kept 349,900 beef-breed cattle as of February 2025, more than any other prefecture [2], and its Japanese Black breeding and fattening herds have ranked first in Japan for decades [1]. Nearly all its cows, about 99%, are bred to bulls developed in the prefecture [1].
It also wins. Kagoshima took the overall team prize at Japan's national Wagyu show in 2017 [1]. In 2022, hosting the show itself, it placed first in 6 of 9 classes, won the Prime Minister's Award for its group of breeding cows, and took the best-carcass prize [3]. The next show is in 2027, held in Hokkaido for the first time [4]. That's where our farm is.
How traceable is Kagoshima Wagyu?
To the animal, in principle. Every Japanese cow has a 10-digit ID that returns its breed, birth date and every move in the National Livestock Breeding Center's registry [6], though the registry names the farmer only with the farmer's consent [5].
In practice, a US buyer rarely learns which Kagoshima farm raised a steak, or how. Some importers and restaurants make a point of passing it on. Most of the time it's lost somewhere between the farm and the plate, because nobody in the chain has met the farmer. The brand doesn't cover feed or housing either [1].
How does Kagoshima Wagyu compare with Peak Wagyu?
Both are Japanese Black, raised in Japan and graded by the Japan Meat Grading Association. Kagoshima is a prefecture's herd; we're one farm and one cow.
| Kagoshima Wagyu | Peak Wagyu | |
|---|---|---|
| Where | Any farm in Kagoshima [1] | Takeda Farm, Asahikawa, Hokkaido |
| Grade | No minimum [1] | A4, BMS 6 |
| The animal | 10-digit ID, if the seller passes it on | Takemitsu-chan, ID 1493019197, grading certificate published |
| The farm | Not part of the brand; rarely named | Named, and we've visited |
| Feed | Not set by the brand [1] | About half Hokkaido-grown hay, plus oats and rice bran from Asahikawa mochi barley |
| Welfare | Not set by the brand | Spacious barn, every cow named, no growth hormones, sent off before maximum weight |
Ellie Takeda and her mother, Tomoko, raise a small herd in Asahikawa, at the foot of the Daisetsuzan mountains, and Ellie visits her cows several times a day. Takemitsu-chan graded A4, BMS 6: above the ceiling of USDA Prime, with more beef flavor and less richness per bite than a top-marbled A5. Frequently asked questions
What is Kagoshima Kuroushi?
Kagoshima Kuroushi (鹿児島黒牛, "Kagoshima black cattle") is the brand name for Kagoshima Wagyu. It's Japanese Black beef from heifers or steers raised longest and last in Kagoshima prefecture, registered as a Geographical Indication in Japan in 2017.
What grade is Kagoshima Wagyu?
The Kagoshima Kuroushi definition sets no grade minimum, so the grade depends on the carcass. Kagoshima Wagyu sold in the US is often A4 or A5, but that's the individual carcass's grade, not a brand rule. Ask for the grade and the 10-digit ID.
Is Kagoshima Wagyu better than Kobe beef?
Neither is better by definition. Both are Japanese Black graded on the same JMGA scale. Kobe sets a grade floor (quality 4, BMS 6) and requires Hyogo's Tajima line; Kagoshima sets no grade floor but has won Japan's national Wagyu show outright twice running, in 2017 and 2022.
How big is Kagoshima's Wagyu herd?
Kagoshima kept 349,900 beef-breed cattle as of February 2025, more than any other prefecture. Its herd of Japanese Black breeding cows and fattening cattle has ranked first in Japan for decades.
