Moos-letter #0: Peak Wagyu's first cow!!!

Moos-letterBy Matthew Condon, co-founder · Published

It's official, Takemitsu-chan is available for pre-order! The meat is sliced, packaged, and at warehouse, from where it will be shipped to your door! We estimate a ship date of no later than July 15th.

To purchase, first select from our assorted bundles, featuring a selection of steak and BBQ cuts from across the cow. From there, optionally select à la carte options like Brisket Smoking Pieces or premium—and low-inventory—cuts like Filet Mignon.

Editor's note, October 2026: we retired the bundles on September 28, 2026. Every cut now sells on its own in the shop, with a $150 order minimum.

Over the next weeks, we'll be working on a bunch of educational resources for the home cook—you need not fear Peak Wagyu! It's easy to cook (and surprisingly forgiving!) once you learn the basics, which we'll teach you. So you can order with confidence, knowing we'll be there with you in the kitchen by the time your meat arrives.

We want to thank everyone who attended our launch dinner, it was an absolutely perfect night filled with great food, great company, and astoundingly good beef.

What an incredible experience for us personally as well: to have our friendship with the people who raised and cared for this cow in Japan lead to a beautiful shared meal with friends & family here in Austin.
