Moos-letter #1: This Week in Peak

Moos-letterBy Matthew Condon, co-founder · Published

We heard from some of our fans—hi Dad!—that we're due for a moos-letter, so here we go!

How to cook it

We frequently hear some version of this looks incredible but I'm terrified of ruining it. So we stuck our heads together and compiled /cooking which covers pan searing, grilling, stewing and braising, roasting, and how to make tallow.

Austin food founders

We went to the Specialty Food Association's networking night and met other Austin food founders, some with great collaboration potential and others with deep connections to the industry.

A private chef's dinner

A local private chef cooked Peak for a dinner at his ranch in New Braunfels last week. We can't say much more but the guest list was like Highschool Music(al) to my ears 😉

We're headed to NYC!

In October I'll head to New York for the Wagyu Sommelier Level 1 certification, taught by a range of industry experts and walk away a Wagyu Sommelier Level 1!

If you or a friend in NYC want to purchase some Peak Wagyu without the shipping costs, we can help organize a group-buy, just reply to this email to coordinate.

How you can help:

Introduce us to a private chef. If you know someone who cooks for others for a living (a private chef, a caterer, a supper club) introduce us! You can DM us on Instagram or just reply to this email and cc them.

Gift it. A box of Peak Wagyu is an exclusive and incredibly memorable gift, please gift it yourself—especially for any fall weddings coming up!—or suggest it to a friend who gives corporate gifts to their clients.
